Roasted Tomato and Olives Sauce with fried capers and fresh Pasta

This is a great recipe to get some more flavors out of winter tomatoes and a great way to make quick pasta without breaking out rolling machine

10 to 12 Roma tomatoes cored

½ cup kalamata olives

1 large onion peeled and halved

2 cups olive oil

1 spring rosemary

1 tablespoon minced garlic

Preheat oven to 350 degrees. Put tomatoes up right in an oven proof baking pan along with onion, olives, olive oil and rosemary, cover and bake for approx. 1 hour. After cooling peel tomatoes put in blender along with onion, garlic and ½ cup of olive oil that tomatoes were baked in. Puree and add sauce to a large pan along with olives.
