Here is a one pot wonder that will appeal to a whole lot of appetites.

2 tablespoons olive oil

1 small onion peeled and diced

2 celery stalks diced

½ bulk breakfast sausage or ½ pound bulk chorizo

1 14.5 oz. diced tomatoes in their juices

1 10 oz. green chile enchilada sauce

4 peeled garlic cloves

2 ½ inch thick skin on salmon filets

½ pound peeled and deveined shrimp or ½ pound langostino lobster tails (available at Costco)

Over medium heat cook the onion and celery for approx. seven minutes. Add sausage and cook until no longer pink inside. Puree the tomatoes enchilada sauce and garlic and add to sausage and onions. Nestle the salmon filets in sauce and cook for approx. 7 minutes. Add the shrimp or langostino and cook for approx. four more minutes. Serve either over or on the side of baked rice.
