Stuffed Flank Steak with Mushrooms and Chorizo

1 2lb flank steak pounded flat to 1/8 inch

Salt and Pepper to taste

¾ pound bulk chorizo

½ onion chopped

1 cup sliced mushrooms

Salt a pepper both sides of pounded flank steak. In an over proof skillet over medium heat cook the chorizo until slightly browned. Remove chorizo and in same pan add onions and cook for approx. 5 minutes add mushrooms and cook for another five minutes. Add onions and mushrooms to cooked chorizo. Pre-cut six pieces of oven proof string to make the flank steak easier to tie. Add the chorizo mixture at one end of flank steak and roll up to look like a tootsie roll. Securely tie flank steak with the six pieces of string to make it easier to cut. Set oven to 350 degrees. In the same oven proof pan brown flank steak on two sides, put in oven for approx. 45 minutes or until a meat thermometer shows 145 degrees. Cut into serving pieces.
