Tomatillo green rice

4 roasted Tomatillos from above recipe

½ cup chopped fresh cilantro

1 cup chopped white onion

3 garlic cloves

6 tablespoons olive oil

1 seeded and stemmed removed jalapeño

1 cup of white rice

11/2 cup chicken stock

Puree tomatillos, cilantro, white onion, garlic and two table spoons olive oil in a blender. Over medium high heat warm the other 3 tablespoons of olive oil and add rice until slightly crisp (about 2 minutes). Add tomatillos puree and chicken stock to rice and bring to a boil. Turn to a simmer and cover, approx. 20 minutes rice is done. Fluff with a spoon
