Just the right ingredients to get your day off to a great start!
¼ cup olive oil
1 small onion peeled and diced
1 15 oz. can of black beans
½ pound bulk breakfast sausage
1 10 oz. green chili enchilada sauce
1 14.5 oz. diced tomatoes with their juices
4 peeled garlic cloves
3 cups tortilla chips put in a plastic bag and reduced to crumbs
7 large eggs
1 cup shredded cheese of your choice
Preheat oven to 400 degrees. Over medium heat warm olive oil and add onion. Cook onion until translucent and add black beans and simmer over low heat 15 minutes. Over medium heat cook sausage until no longer pink in an OVENPROOF CONCAVE PAN. Puree the enchilada sauce with the diced tomatoes and garlic cloves. Pour the combined enchilada sauce over the sausage. Put the cooked black beans over the sauce. Crack the seven eggs throughout the pan. Right before putting in oven surround the eggs with the tortilla chips and cheese. Cook for approx. 20 minutes as you want the eggs slightly runny.
