Twice Baked Potatoes with Salami and Mushrooms

3 large Russet potatoes

5 tablespoons melted butter

3 egg yolks

½ cup sliced button mushrooms

1/3 cups diced salami

4 sliced green onions

½ cups shredded parmesan


Preheat oven to 400 degrees, add potatoes and cook for approx. 50 minutes or until tender. Turn oven to 350 degrees. When potatoes are slightly cooled scoop out flesh and put through a ricer into a large bowl, this will make the potatoes fluffy. In a large mixing bowl combine butter and next four ingredients and mix. With a large spatula gently mix into potatoes. In a large buttered oven proof soufflé pan add potato mixture, put parmesan on top, put into oven and cook for 20 minutes. Serve hot.
