The inaugural vintage of B Cellars Sparkling Wine – 2021 Brut
Our inaugural sparkling vintage is composed of 80% Pinot Noir for depth and roundness and 20% Chardonnay for added structure. The gently pressed grapes were co-fermented in a combination of neutral French Oak barrels and stainless steel. This Brut was made in the traditional method where the wine undergoes secondary fermentation in bottle. The process begins with the addition of a liqueur de tirage (a wine solution of sugar and yeast), triggering a secondary fermentation inside the bottle, which produces both carbon dioxide and yeast cells, or lees. Our sparkling wine went through a 30-month tirage. The yeast cells are collected in the neck of the bottle during the riddling process, which rotates and tilts the bottles. After the yeast has settled in the neck of the bottle the lees is disgorged from the bottle and finished with a small dosage. Then the sparkling wine is corked, caged, and foiled and is finally ready to be enjoyed in the home!
Our winemaking team dreamed for years of producing a B Cellars sparkling wine, in the Champagne tradition. However, there are so many additional steps to making a sparkling wine as compared to still wine, and we knew that we would not settle for anything less than the exceptionally high standards that you have come to expect from B Cellars wines. After extensive discussion, debate, and research, we decided it was time for us to dive in—especially when B Cellars Winemaker Kirk Venge reminded us that he began his professional winemaking career with a Napa Valley sparkling wine house! The 2021 vintage presented an ideal opportunity to add this style of winemaking to our portfolio. However, making an elegant sparkling wine requires extra time and patience, and we are just now ready to release this beauty over three years later.

2021 Brut
A beautiful golden hue with aromas of baked apples and poached pears. On the palate, it is dry with notes of white peach and brioche. The fine bubbles enhance the tasting experience, highlighting the vibrant acidity and creating a luxurious mouthfeel with a harmonious balance
