Enjoy any B Cellars Cabernet Sauvignon with this perfectly seasoned steak, accompanied by bright blackberry gastrique and rich truffle macaroni. The gastrique helps accentuate the wine's beautiful fruit. The richness of the steak and macaroni helps to temper the tannin structure of the wine.

Ingredients

  • Steak
  • 6 6 rib eye steaks

  • 1/2 cup 1/2 canola oil

  • 1/4 cup 1/4 Worcestershire sauce

  • 1/4 cup 1/4 spice blend #8*

  • 2 Tbsp 2 dijon mustard

  • 2 Tbsp 2 chopped garlic

  • TRUFFLE MACARONI AND CHEESE
  • 1 lb 1 ditalini pasta, cooked

  • 2 lbs 2 laura chenel goat cheese

  • 1/2 cup 1/2 truffle oil

  • 3 cups 3 heavy cream

  • 1 Tbsp 1 salt

  • 1 tsp 1 white pepper

  • 8 8 egg yolks

  • 10 oz 10 shredded mozzarella

  • BLACKBERRY GASTRIQUE
  • 1 lb 1 blackberries

  • 2 Tbsp 2 sugar

  • 1 1/2 Tbsp 1 1/2 sherry vinegar

  • 1 1/2 cups 1 1/2 red wine

  • pinch salt

  • ADDITIONAL INGREDIENTS
  • 2 Tbsp 2 soft butter

  • 1/2 cup 1/2 panko breadcrumbs

Directions

  • STEAK
  • In a medium bowl mix oil, Worcestershire, spice blend 8, Dijon, and chopped garlic together until well incorporated
  • Rub steaks with marinade
  • Marinate steaks in mixture for 2 hours
  • Grill over medium-high heat until desired temperature is reached, flipping once during cooking
  • Remove from heat and let rest for 10 minutes before slicing or serving
  • BLACKBERRY GASTRIQUE**
  • Mix all ingredients in a stock pot
  • Cook over medium-low heat and reduce by half until liquid is a syrup consistency
  • Strain and chill before serving
  • TRUFFLE MACARONI AND CHEESE**
  • Mix all ingredients in a large mixing bowl
  • Let set for 2 hours
  • Take the soft butter and coat the inside of an 8x10 baking dish with an even layer
  • Spread bread crumbs in the pan
  • Fill the pan with macaroni mixture
  • Bake at 400°F for 15-20 minutes
  • ASSEMBLE**
  • Plate sliced steak and drizzle gastrique on top
  • Serve macaroni and cheese along side of the steak
  • Add your favorite vegetable for a complete meal
  • Enjoy with a glass of B Cellars Cabernet Sauvignon
