Chef recommends his polenta cake with walnut-sage pesto paired with B Cellars Chardonnay. The richness of the polenta and acidity in the walnut-sage pesto mirror the balance in our Chardonnay, making for a perfect pairing.
Chef recommends our Blend 25, a blend of Cabernet Sauvignon and Syrah, with this hearty fall dish. Duck and Syrah are a classic pairing, bringing out the slight gaminess in the wine, while the grapes and rosemary jus highlight the fruit from the Cabernet Sauvignon.
Seared Duck Breast
Inspired by one of the first desserts Chef Derick created, this chocolate ravioli paired with B Cellars Cabernet Sauvignon is the perfect end to any meal. Rich and flavorful without being too sweet. The espresso in the pasta will help to amplify the earthy characteristics of Cabernet Sauvignon, while the berry compote will bring forth the fruit in the wine. The richness of the filling will help to cut through the tannins found in Cabernet Sauvignon.
