Executive Chef Derek Kuntz has created a special dessert for the holiday season, showcasing the versatility of pairing Rosé. The crisp acidity of the wine cuts through the cream cheese’s richness, while the tartness of the cranberries brings out the wide range of fruit flavors in the wine.

Ingredients

  • CRUST
  • 8 sheets of phyllo dough

  • 8 Tbsp butter, melted

  • Round punch, size of muffin tin

  • NO BAKE CHEESECAKE FILLING
  • 1 lb cream cheese

  • 1/2 cup heavy cream

  • 1/4 cup sugar

  • 1 Tbsp powdered sugar

  • 1/4 cup sour cream

  • 2 Tbsp orange juice

  • Zest of 1 orange

  • 1 tsp vanilla extract

  • SPICED WALNUTS
  • 2 cups walnuts

  • 2 Tbsp blend oil

  • 1/4 tsp nutmeg

  • 1/4 tsp cinnamon

  • 1/4 tsp all spice

  • 1/4 tsp cayenne

  • 1 tsp brown sugar

  • 1 tsp salt

  • POACHED CRANBERRIES
  • 1 cup of water

  • 1 cup of sugar

  • 8 sprigs of rosemary

  • 1 pound cranberries (fresh or frozen)

Directions

  • POACHED CRANBERRIES
  • Create a simple syrup by adding water, sugar, and rosemary to a small sauce pot.
  • Heat until the sugar is completely dissolved.
  • Add cranberries and poach for 10 minutes.
  • Let cool and soak overnight in the fridge.
  • CRUST
  • Preheat the oven to 350°F.
  • Lay out a single sheet of phyllo dough, brush with melted butter.
  • Add another layer and brush with melted butter.
  • Continue until 8 layers of phyllo dough, finishing with melted butter.
  • Punch out 12 rounds and place into muffin tin.
  • Dock the center of each with a fork.
  • Bake for 8 minutes, or until golden brown.
  • Set aside to cool.
  • SPICED WALNUTS
  • Mix all ingredients in a bowl.
  • Lay on a baking sheet.
  • Toast for approximately 5 minutes.
  • Crush walnuts.
  • NO BAKE CHEESECAKE FILLING
  • In a mixer, cream sugar, powdered sugar, and cream cheese.
  • Add rest of ingredients and mix until incorporated.
  • ASSEMBLY
  • Remove crust from muffin tins.
  • Pipe in cheesecake filling.
  • Top with spiced walnuts and 3-4 poached cranberries.
