Crab is a versatile seafood that can be paired with a variety of white wines. Add crab to a rich dip packed full of cheese and bright citrus and you have a dish that is begging to be paired with Chardonnay. The lemon and orange help to bring out the acid and fruit in the wine while cutting through the richness of the dish.

Ingredients

  • CRAB DIP
  • 1 lb crab

  • 1 cup crème fraîche

  • 16 oz mascarpone cheese

  • 1/4 cup shallots, minced

  • 2 lemons, zest and juice

  • 2 oranges, zest and juice

  • 1 Tbsp Dijon mustard

  • 2 Tbsp minced garlic

  • 1/2 cup pecorino or Parmesan cheese

  • 8 oz Monterrey jack cheese

  • 1 cup chopped parsley

  • 1 tsp salt

  • 1/4 cup scallions for garnish

  • CRACKERS
  • 3/4 cup semolina

  • 3/4 cup OO flour

  • 1/2 tsp salt

  • 1/2 cup warm water

  • 2 1/2 Tbsp Extra Virgin Olive Oil

  • 1 egg

  • 1 Tbsp water

  • EVERYTHING SEASONING
  • 2 Tbsp white sesame seeds

  • 1 Tbsp black sesame seeds

  • 1 Tbsp minced garlic

  • 1 Tbsp minced onion

  • 1 Tbsp poppy seeds

  • 1 tsp maldon salt

Directions

  • EVERYTHING SEASONING
  • Combine all ingredients in a small bowl and stir until thoroughly mixed.
  • EVERYTHING CRACKERS
  • Preheat oven to 400° F.
  • Add semolina, flour, and salt to a mixing bowl fitted with a dough hook.
  • Add water and olive oil.
  • Mix until combined.
  • Let dough rest for 1 hour in oiled bowl covered with a towel.
  • Use a pasta roller on desired thickness. Chef prefers #5.
  • Make a quick egg wash by beating 1 egg and 1 tbsp of water together.
  • Brush rolled out dough with egg wash and sprinkle everything seasoning evenly across the dough.
  • Cut into 1 1/2in strips.
  • Bake on parchment lined cookie sheet for 8 -10 minutes.
  • Rotating the pan halfway through the bake time.
  • Let cool before serving.
  • Store in airtight container.
  • CRAB DIP
  • Preheat oven to 350°F.
  • Mix all ingredients in a medium bowl until smooth.
  • Transfer crab mixture into a shallow baking dish.
  • Cook until golden brown, approximately 20-30 minutes.
  • Remove and let cool slightly.
  • Top with thinly sliced scallions.
