minutesChef Derick Kuntz loves his cherry-guajillo syrup with any B Cellars Pinot Noir. It is the perfect addition to chicken and waffles or to any brunch. The sauce's subtle peppers and sweetness showcase mulled bing cherries in the wine.

Ingredients
- WAFFLE BATTER
- 2 cups 2 flour 
- 1/2 cup 1/2 sugar 
- 1 tsp 1 salt 
- 1 Tbsp 1 baking powder 
- 3 3 eggs, separated 
- 1 1/2 cup 1 1/2 milk 
- 1 cup 1 melted butter 
- 3 oz 3 grated parmesan 
- 2 Tbsp 2 chives, chopped 
- CHERRY-GUAJILLO SYRUP
- 1/2 cup 1/2 dried cherries, chopped 
- 2 2 each guajillo peppers, chopped 
- 1 1 each chili de árbol, chopped 
- 2 cups 2 red wine 
- 1/2 cup 1/2 maple syrup 
Directions
- WAFFLES
- Mix dry ingredients (flour, sugar, salt, baking powder, cheese and chives).
- Mix wet ingredients (egg yokes, milk, and melted butter).
- Beat the egg whites until they form stiff peaks.
- Slowly incorporate wet ingredients into the dry mixture.
- Fold in egg whites.
- Cook in a waffle maker.
- CHERRY-GUAJILLO SYRUP
- Heat a medium size saucepan over medium-high heat.
- Add the dried cherries, peppers, and red wine to the sauce pan.
- Cook until the sauce has reduced by half.
- Add the syrup and stir until incorporated.
- Place in a blender and blend until smooth.
- Add a pinch of salt and season to taste.
- CHICKEN
- Use your favorite fried chicken recipe.
- Chef loves to use corn flakes for the breading.
- ASSEMBLY
- Place waffles on the plate
- Top with fried chicken
- Pour syrup over the top
- Garnish with chives or green onions.
