Ingredients
- PEACH MIXTURE
- 1 1 peach, diced small 
- 1 Tbsp 1 fresh basil, chopped 
- 1 tsp 1 olive oil 
- pinch salt and pepper 
- WHIPPED GOAT CHEESE
- 1 cup 1 goat cheese 
- 1.5 Tbsp 1.5 spice blend #7 
- 2 Tbsp 2 half & half 
- OTHER INGREDIENTS
- 1 1 english cucumber 
- 8 8 pecans 
- 1/4 cup 1/4 cider syrup 
Directions
- PEACH TOPPING
- Combine all ingredients together in a large mixing bowl
- Season to taste with salt and pepper
- WHIPPED GOAT CHEESE
- Place all ingredients in a stand-up mixer
- Whip until well incorporated and fluffy
- OTHER INGREDIENTS
- Slice cucumber into approximately 16 slices
- Cut the pecans in half lengthwise
- Toast pecans in a pan
- ASSEMBLY
- Spread 1 Tbsp of whipped goat cheese on each cucumber slice
- Top with peach mixture
- Place toasted pecan half on top
- Finish with a drizzle of cider syrup
