Ingredients

  • Yuzu Pumpkin Purée
  • 3 cups 3 sugar pumpkin (2-3 pumpkins, depending on size)

  • 6 Tbsp 6 yuzu juice

  • 1.5 tsp 1.5 salt

  • Toasted Pepitas
  • 2 cups 2 pepitas

  • 2 Tbsp 2 olive oil

  • 2 tsp 2 salt

  • Togarashi Cod
  • 4 6oz 4 pieces of cod

  • 2 Tbsp 2 togarashi spice mix

Directions

  • Yuzu Pumpkin Purée
  • Preheat the oven to 400°
  • Slice the pumpkin in half lengthwise, scoop out and set aside the seeds
  • Lightly toss pumpkin halves in olive oil and salt
  • Place pumpkin halves cut-side down
  • Roast for 45 minutes or until the flesh is soft and pulling away from the skin
  • Scoop out the inside of the pumpkin and add to a food processor
  • Add yuzu juice and salt, purée until smooth
  • Toasted Pepitas
  • Preheat the oven to 350°
  • Toss pepitas in olive and salt
  • Roast for 10 minutes
  • Togarashi Cod
  • Coat cod pieces in togarashi spice- aprx 1/2 Tbsp per piece
  • Saute in a pan or roast in the oven until fish is cooked through
  • Assembly
  • Smear the purée on the bottom of the plate
  • Top with togarashi cod and pepita seeds

Notes

  • Chef also recommends trying other white flaky fish or shrimp with this dish
