Ingredients

  • 2 lbs 2 ground lamb

  • 2 Tbsp 2 B Cellars spice blend 9

  • 1/4 cup 1/4 butter

  • 1/4 cup 1/4 flour

  • 2 cups 2 celery, diced

  • 2 cups 2 carrots, diced

  • 2 cups 2 onions, diced

  • 1 Tbsp 1 garlic, minced

  • 2 Qt 2 stock (beef/lamb)

  • 1 tsp 1 salt

  • 1/2 tsp 1/2 black pepper

  • 1/2 cup 1/2 red wine (preferably B Cellars Syrah or Blend 25)

  • 1 1 bay leaf

  • 4 cups 4 mashed potatoes

  • 2 cups 2 shredded fiscalini cheddar

Directions

  • Season ground lamb with spice blend 9
  • Brown lamb in a large pot on high heat with butter until golden brown
  • Add carrots, onion, celery, garlic, salt, pepper, and bay leaf
  • Continue to cook for 5 minutes, stirring frequently
  • Add flour and cook for an additional 2 minutes
  • Deglaze with red wine and reduce by half
  • Add stock and simmer on medium-low heat for about an hour
  • Adjust seasoning to taste and remove bay leaf
  • Place inside small oven-safe dish and evenly cover with mashed potatoes
  • Top with fiscalini cheese and place in the oven to melt the cheese
