At The Winery

Blending has always been at the core of what makes B Cellars different.  Not the fact that we make blended wines—plenty of wineries do that. Rather this difference stems from our approach to making “first cut” blends, or blends whose quality and pedigree are as high as any of our single-vineyard wines. It also stems from the detailed and determined approach we take in blending. We blend multiple rounds for every wine and blend right up until the very morning of the bottling. And finally, it stems from the creativity in crafting the blends. Flavor and palate trump tradition and custom. All that matters is the final aroma and taste.

Just after the new year, the winemaking team gathered in the Grand Salon to begin crafting wines from individual vineyard lots and barrels. Master Winemaker Kirk Venge (and his dog Sage), Associate Winemaker Derek Taylor, General Manager Curtis Strohl, and founder/proprietor Jim Borsack meticulously taste, blend, discuss, blend again, taste, and repeat, all the while taking meticulous notes and measurements. This seemingly enviable job is actually hard work and often encourages passionate discussions among the group. Ultimately, their hard work pays off in the form of exquisite wines that you have come to know and love.

For Someone Special

January B-Bites

If you can’t make it out to the valley to enjoy wine country and the magnificent scenery, then the second-best thing is to bring the experience home. Whether you are enjoying the evening with your partner, getting together with friends, or celebrating being single. Chef Derek has curated three different wine pairing menus, allowing you to focus on enjoying your evening instead of finding the perfect pairing.

In The Kitchen

January B-Bites

With wet and cool weather settling into the valley, Chef Derek has continued to feature an all-red wine pairing menu. Perfect for winter and the coming months. Chef has created this menu to pair with unique wines and features some favorite bites with a fresh spin, along with a brand new dish that has burst its way onto the scene-making this menu truly an unforgettable tasting.

New Releases This Month

2020 Beckstoffer Heritage Wines

January saw the release of our most prestigious and most sought-after wines; those made from Andy Beckstoffers Heritage Vineyards. This is a limited vintage for B Cellars, with only three historical sites in bottle, with a fourth bottling in the coming days. Quantities of all four are extremely limited and will be sold out before spring arrives. These gorgeous wines display softer tannins, intense luscious mouthfeel, bright fresh red fruit notes, and well-balanced acidity.  This is a special opportunity to add rare and prestigious wines to your collection.
